title graphic Meat Science with images of Salmonella t. and meat inspection After being voted the no. 2 Meat Science program in the US for two years running, in fall 2004, ISU's program attained no. 1 status in a national survey of programs conducted by MEAT&POULTRY magazine.

The ISU program is unmatched for providing students access to first-rate faculty advisors, top educational programs, cutting-edge technologies in meat processing (including a linear accelerator for irradiation studies), and opportunities to interact with industry representatives. Training facilities include a pilot meat processing plant, equipped with the latest instruments and equipment to take live animals through to finished meat products.

The graduate program also includes a significant component devoted to food safety and security.  Students have access to and train in biocontainment labs with live pathogens.  Research at ISU in food safety has been highlighted in the national press, including most recently Dr. D.L. Harris' work with bacteriophages to control Salmonella infections.

Graduates of the Meat Science program occupy executive-level positions in the meats industry around the US and abroad.  Many have gone on to found new companies and expand entrepreneurial opportunities in the field.  Post-graduation placement for MS and PhD degree-holders consistently runs at 100 percent.

Meet Armitra Jackson.  Armitra came to ISU from her home in Pine Bluff, Arkansas, where she completed her BS in animal science at the University of Arkansas-Pine Bluff.  She is working on her PhD degree with an emphasis on food safety.  Dr. Joseph Sebranek is Armitra's advisor.
