The Department of Animal Science at Iowa State University, is pleased to welcome Caroline Downey as a new Assistant Teaching Professor and Meats Judging Team Coordinator. With her extensive background in meat science research, teaching, and industry collaboration, Downey will be a valuable asset to the department and a key resource for our students.

Downey received her Master of Science in Meat Science from Iowa State University and her Bachelor of Science in Animal Science from the University of Illinois, Urbana-Champaign. During her graduate studies, Downey conducted research on ground beef color stability, lipid oxidation, and meat processing methods. She also played a key role in the Iowa State University Meat Laboratory’s efforts to package over 300,000 pounds of ground beef and pork for the Feeding Iowans Program.
Most recently, Downey has been an integral part of the University of Illinois’ Department of Animal Science, where she has developed and delivered comprehensive courses on meat evaluation principles, USDA grading, and retail cut assessment. In her role, she has also organized field trips to meat packing plants, provided mentorship to students, and coached the university’s meat judging team.
In addition to her teaching responsibilities, Downey had taken on the role of Interim Meat Lab Manager, overseeing daily operations, including scheduling, inventory management, and quality control. She ensured compliance with USDA Inspection and HACCP regulations while leading a team of 20 undergraduate and graduate students.

Caroline brings a unique set of skills and experiences that will no doubt be to the benefit of our students in both the classroom and through the intercollegiate meats judging program that will help prepare them for exceptional careers,” said Jason Ross, Chair of the Department of Animal Science.
